Jerk Portobello Mushroom Nacho Fries

The overwhelming of my plant-based recipes and dishes come from me wanting to "veganize" something that I enjoyed prior to making the lifestyle change. Today, was no different. My son was tearing up some jerk chicken nacho fries from a west side jerk spot. I cannot lie, they smelled like the whole bomb.

As soon as I thought that, I realized I had some portobello mushrooms in the 'fridge. I immediately got to work on my vegan version of jerk chicken-less nacho fries. Not only is this recipe quick and easy - it's super healthy and packed with flavor.





A few of the main ingredients I used can be tweaked. For instance, I used portobello mushrooms, but if you have bella mushrooms or a similar type, that works too. I also used a yellow potato and cut it fresh. If you wanted to use frozen fries, go for it! Finally, I was lucky enough to have leftover jerk sauce from the spot they got the jerk chicken nacho fries from, but if you want to make your own or go to the store to buy some, any of these options work fine.


Kitchen Tools You'll Need:

Air fryer

Bowl for tossing

Cutting board

Skillet (I used a cast iron skillet)

Knife

Cooking spoon


Ingredients (these quantities are good for 2 servings:

2 portobello mushrooms, diced (I cut off the stems and washed it)

1/2 bell pepper, diced

1/2 yellow onion, diced

1/2 small jalapeno, diced (optional, only if you like some real kick!)

1 tomato, diced (I used a roma tomato)

3 tablespoons of jerk sauce

cilantro and avocado to top (as much as desired)

2 medium/large potatoes (I used yukon gold potatoes)

2 oz of shredded vegan provolone or mozzarella

2 tsp of oil (I used grapeseed oil)

2 tsp on cajun seasoning (I used Slap Ya Mama)

2 tsp of smoked paprika

1 tbsp of garlic powder

Instructions:

Preheat your air fryer on 400 degrees

Heat skillet on low to medium heat

Toss the diced veggies in jerk sauce and let sit for 2-3 minutes

Season your fresh cut fries with the cajun and garlic seasonings and cook in air fryer for 12-15 minutes on 400 degrees

Add veggies to skillet and saute for 2 minutes then turn heat on low and cover; cook for about 8-10 minutes, remove from heat

Once your fries are done, place them in your dish and layer your veggies, tomatoes, vegan cheese and desired toppings like cilantro and avocado. Enjoy!
