When I had a hankering for my black bean brownies, then realized I did not have said black beans, I had to improvise! Since I had chickpeas and know they make for tantalizing desserts too, decided to try it out and guess what? They were everything I hoped they would be and more.
These are of course, vegan, but also gluten-free and you guessed it---super duper easy 'cuz that is how I roll!
How to Make Vegan Chickpea Brownies
1 – 15 ounce can of chickpeas, rinsed and drained
1/2 cup nut, cookie or granola butter (I used Oat Hause Vanilla Granola Butter)
1/2 cup maple syrup
1 tbsp coconut oil, melted
1 tsp vanilla extract
1/4 cup almond flour
1/4 tsp baking soda
1/4 tsp baking powder
1/4 cup cocoa powder
a couple pinches of salt (about 1/4 tsp)
1/2 cup vegan-friendly chocolate chips and about a handful or two to sprinkle on top (I used these Enjoy Life Mega Chunks I got from Whole Foods)
Directions:
Preheat oven to 350 degrees.
Add everything except chocolate chips to your food processor.
Process ingredients until smooth. Use a spoon to merge all ingredients ensuring they are being processed.
Remove blade. Add in chocolate chips and stir.
In an 8x8 pan or 8 inch round pan, pour in mixture. If baking in a smaller dish, bake for 8-12 additional minutes.
Sprinkle additional chocolate chips on top if desired (but if you have them, why not?!)
Bake on center rack for 21-23 minutes.
Let cool for 10-15 minutes and enjoy these super moist Chickpea Brownies!
