Easy Vegan & GF Chickpea Omelette

I’ve been tearing up some chickpea omelettes for breakfast, because they are easy, vegan, gluten-free and yummy👏🏽🤤


Outside of the simple ingredients, it only takes about 15 minutes total to prepare.


The following measurements make one omelette. Depending on the amount of fillings (veggies/cheese/etc, you may be able to split into two portions). Normally, I make this and save the other half for the next day.



You can sauté veggies before adding in omelette mix or add veggies to mix and cook together.


What you'll need:

Pan

Spatula

Mixing bowl

Whisk or fork


Recipe makes 1-2 servings / one omelet.


Ingredients:

1/3 cup of chickpea flour

1/2 cup of water

About 1/2 tbsp of cooking oil or vegan butter

Chopped veggies of your choice (I used bell peppers and yellow onion)

Optional: vegan cheese

A few pinches of black salt, also called Kala Namak (gives it an eggy flavor)

1 tsp Smoked paprika

2 tsp Garlic powder

2 tsp Onion powder


Directions:

Add about a tablespoon of oil or vegan butter for your pan (you can also spray your pan with avocado oil spray/similar).


Sauté veggies on low-medium heat for 2-3 minutes.


While veggies are cooking, mix chickpea flour, water and seasonings in a bowl; whisk together until smooth (about 15 seconds).


If you're using vegan cheese, add it to mix.


Pour mix into pan with veggies and let cook on low to medium heat until it has a pancake consistency (about 3-5 minutes).


Carefully flip half of the omelet over to fold in half and cook on low for another 2-3 minutes.


Remove from heat and serve.


I made it with a side of air fried diced potatoes, but normally just eat it with a slice of avocado and tomato toast (w/gluten free bread if you want to keep it gluten free).
