Super Easy Vegan Lobster Roll

This Vegan Lobster Roll is just as yummy as the traditional version - but vegan! Not one lobster was involved!


I’m here to tell you that yet again…vegans are not going without!😂


These sandwiches are super easy to recreate vegan with one of my favorite plant-based meat substitutes — hearts of palm.


WHAT DO HEARTS OF PALM TASTE LIKE?

Hearts of palm are so mild and have a white fish-like texture, making them a great option to recreate versions of seafood like vegan scallops, vegan calamari, vegan lobster and vegan crab cakes (check out my recipe here).


You can find hearts of palm in a can at most grocery store shelves with the other canned goods or the “ethnic” aisle. I have also seen HOP in a pouch.


INGREDIENTS

  • 2 cans 14oz (410g) of Hearts of Palm, drained and rinsed

  • 5 tablespoons vegan mayonnaise

  • 1 stalk of celery, finely diced

  • ¼ of a red onion, finely diced

  • 1/8 red bell pepper, finely diced

  • 2 tsp fresh lemon juice

  • 1 tbsp of Smoked Paprika

  • 1 tsp of garlic powder

  • 2 tsp of kelp granules (can substitute with Nori flakes or finely chopped/crushed up dried seaweed wrap)

  • 4 long buns/rolls split at the top; I used these

  • Vegan butter for buns


For topping:

  • Fresh chives, green onion or fresh/dried dill


Taste your mixture after adding everything. You may want a tad more lemon juice, kelp granules or Old Bay. Season to taste from there.


WHAT KITCHEN ITEMS YOU’LL NEED:

Mixing Bowl

Spoon

Griddle/Pan

Cutting board and knife / veggie chopper

Can opener if canned hearts of palm


HOW TO MAKE VEGAN LOBSTER WITH HEARTS OF PALM AHEAD OF TIME & STORAGE

You can prepare the lobster mixture ahead of time. Toast the rolls just before serving. I plan to make this for my summer events at home and cut them in half as tantalizing and filling appetizers.


I haven’t tried to freeze hearts of palm, but I wouldn’t recommend it. You can keep the vegan lobster mix for 3-4 days in the fridge, even though I don’t think it’ll last that long. 😃





THE VEGAN-FRIENDLY ROLLS FOR THE LOBSTER ROLLS

I bet’ not catch you using an old flat hot dog bun for this! LBVS.


Let’s keep this presentation giving what it’s ‘posta gave and use a vegan-friendly long/hot dog brioche bun or my fave, Pretzilla sausage rolls!


I have yet to find a gluten-free vegan-friendly version of these rolls at my local grocery store, but you can make it gluten free by switching out the bun. The vegan lobster 'meat' is gluten free.


HOW TO MAKE VEGAN LOBSTER ROLLS

This recipe is just too easy and if you have been rockin’ with me for any amount of time, you know that is how I roll!


Whip this tantalizing vegan lobster roll up in less than 20 minutes and it's perfect for a cookout, party, tailgating or just cuz you are hungry!



Instructions:

- Cut/chop the hearts of palm into bite sized chunks.


- Add all the dressing ingredients to a bowl and stir/combine.


- Add the chopped hearts of palm and gently mix.


- Butter the buns and lay flat on a griddle, toaster oven, grill or pan to toast.


- Load up your bun with the vegan lobster and dress with fresh chopped chives and smoked paprika.


If you like a lil’ kick, you can add thinly sliced jalapenos and/or a lil’ sriracha!


If you don’t have chives, the easiest sub is green onions/scallions. If you love dill, like me, you can also add fresh or dried dill as a topping.


Serve with:

Potato chips

Kettle chips

French fries

Dill pickles

Cabbage salad
