The Pinterest is a mystical, beautiful place where all things are possible! Its where I came across a pin from Chocolate Covered Katie that blew my mind---brownies with no flour..no sugar..and made with black beans!
These brownies were the bomb. I love a cakey (vs fudgy) brownie so I baked an extra 15 mins than her recipe instructed. I also added some hemp hearts for added texture and protein. Instead of chocolate chips, I broke up vegan dark chocolate squares.
Ingredients
1 1/2 cups black beans (1 15-oz can, drained and rinsed)
2 tbsp cocoa powder
1/2 cup quick oats (I used 2 prepacks of Maple Honey flavored oatmeal)
1/4 tsp salt
1/3 cup pure maple syrup, honey, or agave --- I used maple syrup
pinch uncut stevia OR 2 tbsp sugar (or omit and increase maple syrup to 1/2 cup) --- I increased/used maple syrup
1/4 cup coconut or vegetable oil ---I used vegetable oil
2 tsp pure vanilla extract
1/2 tsp baking powder
1/2 cup to 2/3 cup chocolate chips (Not optional aka omit at your own risk)
Makes 9-12 brownies
Instructions:
Preheat oven to 350 degrees
Combine all ingredients except chips in a good food processor, and blend until completely smooth (a blender can work if you absolutely must, but the texture—and even the taste—will be much better in a food processor)
Stir in the chips, then pour into a greased 8x8 pan
Optional: sprinkle extra chocolate chips over the top.
Bake the black bean brownies 15-18 minutes (for fudgy consistency, 25-28 mins for cakey brownies), then let cool at least 10 minutes
If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up!
