I had the pleasure of checking out the BRAND NEW 100% vegan Mexican eatery, Penelope's Vegan Taqueria.
This behind the scenes experience was definitely a treat because not only did I get to enjoy the food, but I got to meet the owners. This welcomed addition to the Chicago dining and vegan scene is owned by Juan and Paloma of Vegan Street Food. I also got to meet their energetic, adorable one year old daughter, Penelope, who inspired the name of their first restaurant.
Yall, this restaurant is gorgeous, with a vibrant color scheme consistent with Mexican tradition, modern design and the food is straight up tantalizing. The first thing I noticed was the bold artistic feel. The mural is by Mexican artist, Senkoe from Tulum, Mexico.
When I arrived, Chef Juan was already in the kitchen whipping up some magic for me, Senkoe, the artist, was making his finishing touches on the mural and Paloma was filling me in on all the deets and making final preparations for the opening. Excitement and good energy was in the air!
Here's what I enjoyed:
Elote: Oh my goodness, this classic Mexican corn on the cob dish was so tantalizing. To be honest, I never liked elotes, but this was everything. Definitely a must try!
Horchata: This classic Mexican drink is lightly sweet and yummy.
Spicy Michelada: Penelope’s is going to be a sober-centric eatery with mocktails galore and I love that! This drink was too spicy for my taste, but they will have multiple mocktail options!
Their Beyond Meat burger had a Mexican touch with their house made mango salsa, served on a pretzel bun. It was so good!
Avocado toast: This avocado toast is loaded with pepitas, alfalfa has a citrusy taste that I really enjoyed. Definitely a fabulous option if you're looking for an appetizer or something light and quick.
Mushroom tacos: These veggie tacos were yummy, light and tasted super fresh.
All in all, this is a solid new addition to Chicago's vegan scene that gives us the vibes, the culture and the good food! This spot will be perfect for a girl's night out, date night, small groups or solo dining.
